Watch me level up my Pistachio Crumble Pudding Cookie!💚🍪 Each of my cookie recipes goes through a few trial runs before I land on the exact way that I want to bake it for you! Trial one had pistachio pudding mix and chocolate chips, but I knew it could be even better! My final cookie run has pistachio pudding mix, is stuffed with crushed pistachios, rolled in sugar before baking, and finally topped with a chocolate glaze and crumbled pistachios! Yummier and, dare I say, prettier too!💚🍪

Every pudding cookie begins with butter, brown sugar, and sugar creamed together! This step is so important in creating that fluffy texture you expect from a pudding cookie 🧈🍪 Not only does creaming the butter and sugars together first allow the sugar to be fully dispersed throughout the butter, it also incorporates more air into the cookie dough. POV: you meet me and I just wanna yap about pudding cookies Farmers Market season is coming up and I always get the question: “What the heck is a pudding cookie?” It’s not a cookie filled with gooey pudding, even though it sounds like that would be the case. My pudding cookie dough is made with instant pudding mix. Pudding mix is mostly cornstarch, and cornstarch is key to creating a soft, thick cookie. Cornstarch aids the flour in absorbing liquids, while not developing gluten structure like the flour does. This allows the cookie to have more structure, creating a thick cookie, while increasing the softness of the texture.
